Instructions
Heat the coconut oil in a skillet over medium heat. Once melted, add the onions and sauté until soft and translucent, about 5 minutes.

Add the broccoli and vegetable broth to the skillet. Bring the mixture to a boil.
600 g broccoli,
1 L vegetable stock
Once boiling, turn the heat down to low and simmer for about 10 minutes, or until the broccoli is cooked and tender.
Carefully transfer the cooked broccoli mixture to a food processor or blender. Add the mint leaves.
Blend until the soup reaches your desired consistency. For a super smooth soup, blend for a bit longer!
1 handful mint leaves
Pour the blended soup into a saucepan. Stir in the milk and heat it up gently.
250 ml milk
Serve warm and enjoy!
