Broccoli-Mint Soup
This vibrant green soup is packed with flavor and nutrients. It's a quick and easy meal that's perfect for a light lunch or dinner.
Equipment
- 1 skillet, pan or pot medium
- 1 saucepan medium
- 1 measuring spoons
- 1 food processor or blender
- 1 scale
Ingredients
- 1 tbsp coconut oil
- 1 onion chopped
- 600 g broccoli chopped
- 250 ml milk skimmed or low fat
- 1 L vegetable stock or bouillon cube dissolved in 1L hot water
- 1 handful mint leaves fresh or dried
Instructions
- Heat the coconut oil in a skillet over medium heat. Once melted, add the onions and sauté until soft and translucent, about 5 minutes.1 tbsp coconut oil, 1 onion
- Add the broccoli and vegetable broth to the skillet. Bring the mixture to a boil.600 g broccoli, 1 L vegetable stock
- Once boiling, turn the heat down to low and simmer for about 10 minutes, or until the broccoli is cooked and tender.
- Carefully transfer the cooked broccoli mixture to a food processor or blender. Add the mint leaves.
- Blend until the soup reaches your desired consistency. For a super smooth soup, blend for a bit longer!1 handful mint leaves
- Pour the blended soup into a saucepan. Stir in the milk and heat it up gently.250 ml milk
