Zucchini Vegetable Salad
Ingredients
Salad Ingredients:
- 2 cups zucchini thinly sliced
- 2 cups arugula
- 1 cup basil
- 3 cups lettuce thinly sliced
- 1/2 cup olives sliced
- 1 cup bell peppers thinly sliced
- 1 cup cucumber thinly sliced
- 1/2 cup feta low fat
Dressing Ingredients:
- 2 tbsp olive oil
- 1/4 cup lemon juice
- 2 tbsp pomegranate molasses
- 2 tbsp balsamic vinegar
- 1 tbsp mint dried
- 1/2 tsp garlic powder
- 1/4 tsp cumin
- 1/4 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Line the zucchini slices in an air fryer basket. Spray with olive oil and bake in an air fryer for 8 minutes at 200°C.2 cups zucchini

- Add the sauce to the salad, mix and serve immediately.
